Well yeah but others use classical music too. LoGH for example, hell even Digimon Adventure. That said you posted my favourite piece in Nodame (Rhapsody in Blue comes close though).

Have some more Saint Seiya though.

  Hellsing Ultimate's production has had an interesting mix of "meh" aspects and kickass, grade-A work. I'd definitely put the soundtrack in the latter category.
