Jolteon, since it's so speedy and because I like electric types a lot. I like Umbreon as well, but can't be arsed to do that whole happiness thing.

I did not like evolving eevee i made more evees to evolve(using ditto and the daycare) and made all of them then immediately discarded them eevee was my favorite

Jolteon was usually my choice, it'd looked the best in my eyes.

Umbreon, solely because it's the only one I ever use in battle.
