The thing that makes our blood red is hemoglobin which is contained in the cells. Trolls must have some other pigment floating around in their system that masks the red (or whatever the hemoglobin equivalent is for them), and might also be found in other bodily fluids.

Hemoglobin isn't the only oxygen-carrying protein. Here's a list (heavily chopped up from Wikipedia):

Myoglobin: distinct red or dark gray color

Hemocyanin: blue in color when oxygenated

Hemerythrin: pink/violet when oxygenated

Chlorocruorin: Appears green when deoxygenated and red when oxygenated

Pinnaglobin: Brown

Coboglobin: colorless when oxygenated, but yellow when in veins

Now, granted, only like one of those is actually found in vertebrates, but it just shows that it's at least plausible in a vague, inaccuratre comic-book science way. It might be possible to make a case that they have the genes for all the colors, but epigenetic factors from their trials/mother grub deactivate all but one.

Actually, biological systems have precision handled pretty well. Fruit fly embryos have a system where in order to lay out a body plan, they create stripes of increasing complexity using gradients of protein transcripts. It starts off with just a couple broadly defined zones, but near the end of its development the embryo has 14 segments where each segment's defined area stops and the next one's starts in the space between two adjacent cells. Anyways, there doesn't have to be just one stimulus, and the trolls' innards don't have to be very precise. If a troll grub is only can only distinguish between, say, absence/presence or absence/partial/full presence, you can get the full color spectrum using only two or three external factors.

I assumed that this was a representative of troll genetics, and that they're simply diverse as all hell.

When you have a single powerful entity (The Mother Grub) responsible for mixing and matching the genetic data of an entire generation of trolls (Filial Pails, bluh bluh), you could potentially combine together otherwise rare and uncommon factors to make unusual genetic talents a lot more common.

Basically I think that trolls use the mother grub system as biologically aided eugenics and that this probably also results in the wide (and standardized!) variety of blood colours.

It also might explain why Sollux has leet mind powers but is also bipolar--those genes were linked. Or Vriska can mind-control, but has shit for social perception or a basic sense of empathy. (Aspergers cognitive style with a side of spidermom parenting), etc.

Actually I take that back I could totally see her selfishness and lack of empathy/ability to put herself in other's shoes effectively as the result of having to grow up killing lots of other kids to feed her big dangerous mom. Wheeee coping mechanisms can fuck you up for later.

I sort of love the Kanaya/Vriska/Tavros thing, especially since every other person is oblivious. Vriska is oblivious to Kanaya's attentions, Tavros is oblivious to Vriska's intentions (mostly being scared shitless of her), Kanaya even oblivious to her own intentions.
