I'd like to see George Takei as Long Feng... he can play serious roles pretty well, and I can hear him saying some of Long Feng's lines with a dramatic touch that would send chills down your spine. Sure he's Japanese, and Earth Kingdom is supposed to be China (I think), but at least he's Asian.

I'd also like to see Dwayne Johnson (wow it was really difficult to call him that) play The Boulder for the sheer meta-ironic hilarity.

Also, what part of the Earth Kingdom is analogous to what country depends on where you're looking. Kyoshi Island was technically part of the Earth Kingdom, and it was Japan. Song's village had people wearing Korean clothing. Toph apparently wore Tang Dynasty clothes in Gaoling. Ba Sing Se residents were all wearing the Queue, which started among the Manchus, and was pushed on the Han Chinese (the largest ethnic group in China, and 90% of the modern day Chinese population) during the Qing Dynasty.

Also, I've said this before, but Cary Hiroyuki Tagawa was my mental Iroh. I'm not familiar enough with any Chinese-American or Inuit child actors for anybody other than Aang, though.

James Hong is my fantasy Iroh. Of course he's the only other living Asian actor that I can name off the top of my head aside from Cary Hiroyuki Tagawa, who I can never remove from my brain as Shang Tsung.

Honestly, it doesn't matter. As much as we'd love to see Lloyd as Bumi, Takei as Long Feng or Hong take over the role of Iroh. The film series is ruined. There's no hope for redemption no matter how many stars they cast.
