And the thing with doing research on animals is that one way or another, you're eventually going to have to kill some of them and take them apart. The killing part is not easy and should not be easy, but dissection and looking at different parts doesn't actually take that much getting used to. A corpse, or a piece of the corpse, is not an animal anymore. Besides, you likely ate meat for most of your life so it's not like you aren't used to seeing and manipulating disembodied chunks of muscle.
What's slightly creepier than controlling muscle contractions with electricity is to just use table salt (or soy sauce in this video), so the muscles start contracting on their own.
