...I don't think you eat cinnamon sticks like that as they are? I could be wrong but I think it would be too overpowering of a taste and way too crunchy.

I am guessing it's use in the jar is to add subtle flavoring to the preserve. You never eat the actual stick I don't think.

If it was me I would dry them out then grind them to powder and add it to ice cream.

You think they would be served well with that? I'd sprinkle a lot on otherwise I think the mouthful of ice cream would wash out the cinnamon particles, taste-wise..

What about some sort of smoothy with rice milk, banana, your cinnamon dust, and maybe a little peanut butter?

Disregarding the cinnamon stick, I'd scoop it out and eat it from the jar, but maybe they make marmalade too. I think there's already some syrup action going on.
